After two years of hard work, with laughter and some tears, WE’VE FINALLY GRADUATED!! Even though it was a virtual graduation and we couldn't celebrate together, it still feels amazing to be done with schoolwork! We’re both graduating with a Masters degree in Nutrition & Health Promotion with an Entrepreneurship focus! Words cannot describe how excited we are to start our next chapter. We can not believe we are done with school forever. Our dream of being a dietitian is so close to our reach! However, the current COVID-19 pandemic is placing everything on a pause… including our ability to take the RD exam!
Currently, testing centers have re-opened, but slots are extremely limited. Additionally, at-home proctored testing could be available end of July so we’ll be patiently waiting for spots to open up as we begin studying for the exam. We’ve using Jean Inman to study which was provided by our university! There are so many different methods of tackling this exam.
Do you have any tips or questions for us as we approach this big milestone?
With our extra time, we’ve been spending more time social distancing, cooking, baking and we hope to share our favorite recipes with you all! Rui has been babysitting for an ICU pulmonologist, but has learned many traditional Indian recipes! Have you heard of Idli or Dosa before?
As for Nicole, she still works at the eating disorder center, but everything is
virtual now. And so she spends a lot of time doing meal coaching through zoom. It’s definitely more challenging than she had anticipated because even though we can see each other’s faces - the support just doesn’t feel the same! Though with time, it’s definitely become easier as everyone becomes accustomed to the new way of living.
And with all that, we’re also taking this time to REST and give ourselves some time to catch up on our hobbies now that finals are over. However, given limited options, we’re always looking for fun activities to do since we can’t go outside! And until we can hang out again, we'll be saving our celebration for then!
