Japanese Milk Bread Rolls

Like many others, baking bread has been a great way to pass the time! I decided to take on this challenge and get on this bread making boat!


The recipe that I used below was adapted from King Arthur’s Flour, it has fewer ingredients but it was still just as soft to eat. It took me two tries to get it right so I included some tips in my recipe. I hope you guys will enjoy just as much as I did!! I learned that the reason this bread is so soft and moist because of the starter that you include which helps contain moisture. If you decide to give it a go, I’d love to see how it works out! '



Ingredients:

Starter:

-3 tbsp water

-3 tbsp milk (skim, whole and soy all works)

-2 2bsp flour (bread or AP)


Dough:

- 2 ½ cups Flour

- ¼ cup sugar

- 1 tsp salt

- 1 tbsp instant yeast

- 1 egg

- ¼ cup unsalted butter, melted


Egg wash:

-1 egg

- 1 tbsp water


Instructions:

Starter:

  1. Whisk all the ingredients together in a saucepan on medium heat until it’s fluffy. Set aside in a bowl to cool and prepare the ingredients for the dough.


Dough:

  1. Combine all the dough ingredients along with the cooled starter and knead for about 20-25 minutes until the dough is smooth. Really give it a good knead so that your bread will be extra fluffy when you bake it. Then shape the dough into a ball.

  2. In an oiled bowl, place the dough in and cover it. Let it rest for 90 minutes.

  3. On a floured surface, split the dough into 8 pieces and roll each into a ball. It helps to knead the 8 pieces so that it rolls into a nice ball.

  4. Place the rolls into an 8” or 9” pan, cover it and let it rest for another 50 minutes

  5. Preheat the oven to 350F degrees

  6. Combine the egg and water for the egg wash and brush over the buns

  7. Bake the bread for about 25-30 minutes

  8. Let the rolls cool for about 10 minutes and enjoy!
